Taking control of ALL holdings during war

I often see mention of taking over a county and instructions that you should first hand out the holdings before handing over the county to a vassal. However, whenever I win a war I am generally granted the county (or duchy, etc.) but not the holdings within it. How do you go about also taking the holdings without just revoking them upon victory (which obviously incurs hefty penalties)? This would be especially useful information for those times you claim a prince-bishopric and have no way of "fixing" the county without penalties.

    Depends on the Casus Belli.
-With Invasion CB and taking highest score in a successful Crusade you get a whole kingdom, at least every holding the enemy target holds (you won't get the holdings owned by people you aren't at war with, which it is possible to miss in the case of divided counties, where different sub-holdings are controlled by different realms).
-Holy War CB you get every holding in a whole Duchy (once again, only the holdings of the targeted enemy of course).

edit - In addition, the penalties only last a few years (3-5? I don't recall), so some people just eat the penalties if the above CBs are not available.

Well that would explain it. I'm not sure I've ever used the invasion CB or been far enough in a game to be next to muslim territories.

You can also use it against the baltic pagans. You do tend to get mega-alliances against you when you use holy wars, but the rewards can be worth it.

I know alot of people would tell you to do that, personally I just appoint the guy I want to control the County or Duchy and give everything to said person so he doesn't get pissy about me controlling something of his. Plus I enjoy having vassals who can wield a bit of muscle should they get angry at me...but thats my own playstyle everyone has their own.
