For me, they're at Documents > Paradox Interactive > Crusader Kings II > Save Games

You can open them in notepad but be patient it usually takes a while for them to open as they are quite large.

Notepad++ is really nice for opening these big text files. I use it for reading all the text files in Paradox games.

yes go for notepad ++, with it you can also add plugins to the programme, giving it greater scope/usefulness
