I've never been a fan of music, I enjoy listening whenever something pleasant is running, but I've never had the urge to go and start a track myself, hence I am quite unfamiliar with songs and bands.

Therefore..

I would like to hear what YOU guys listen to while playing EU3. And here are the rules, from sorted by their importance in descending order.

1. The track should fit with the EU3 "feeling" hence no rap/heavy/etc
2. Track name
3. Track author/band/performer if possible
4. Link to Youtube or other hosting site if possible

I really like instrumental movie soundtracks, the right ones fit perfectly

I use:
Crouching Tiger, Hidden Dragon
Kingdom of God
Master and Commander
Gladiator
Kundun
The Mission

I plan on adding more, maybe "Hero" and "Lawrence of Arabia"

Some of classic songs, that might work:

Some Richard Clayderman songs, or even Howard Shore (soundtracks from LotR - for those who don't know), Enya, etc...

Corvus Corax usually work well for me, especially the 'Cantus Buranus' (I and II) albums.
